It is always fun to pull out your cozy, comfy fall recipes using in-season produce. But, sometimes the same-old, same-old gets a little boring. Let these new spins using your favorite fall produce get you in the mood for all the fun fall has in store! 

We are going to focus on these main fall ingredients: Apples, Corn, Pumpkin & Squash.

 

Apples

Apples have Vitamin C and Fiber. Like corn, apples pump up your immune system to keep you healthy. Fiber helps everything run smoothly through your digestive system.

Apple Spiced Pancakes

Pancakes are a Saturday morning staple in many homes… why not add a fall twist to a family favorite?!

Corn

Corn has Vitamin C which helps fight off disease and protects cells so they aren't damaged. Yellow corn also helps your eye health!

Slow Cooker Chili with Black Beans and Corn

This one may look like a lot of ingredients, but it’s truly a dump, set, and forget slow cooker meal!

Pumpkin & Squash

Pumpkin and Squash have Antioxidants to promote skin and heart health. These foods also taste a little sweet, so they can be a savory addition to many meals!

We are going to build off of the basics, here. With an ingredient you don’t use but a couple of times a year, it can be tricky to remember exactly how to cook it. Let this be your guide for the easiest side ever! (And how can you beat only 4 ingredients?!)

Harvest Chicken Casserole

Cook the chicken. Chop up the ingredients. Mix. Bake. Done. Simple, right? Even though this is a simple dish, it will put a smile on everyone’s face since their bellies will be full with a power-packed meal. **PRO TIP: cook up a bulk amount of chicken breasts on the weekend for easy dinner prep throughout the week. It will be fully cooked and ready to toss into any meal as a good source of protein and flavor (that won’t cost you any extra time on busy weeknights!).
